Executive Chef Mark LoRusso at Botero has created a five-course tasting menu featuring ahi tuna parfait with hamachi and American caviar, ricotta raviolini with black truffles and beurre blanc, crispy skin black bass with Dungeness crab grits and roasted artichokes, and rack of Colorado lamb with goat cheese souffle and creamed spinach. For dessert, enjoy a 'deconstructed' candy bar with dark chocolate ganache and salted caramel ice cream and milk chocolate pot de creme with vanilla pecan blondie and Bailey's Chantilly cream. The prix fixe menu is $95 per person. The regular menu is also available.

In addition to its usual menu, Country Club -- A New American Steakhouse offers an "Aphrodisiac Tasting Menu" from Executive Chef Carlos Guia. The menu features chilled oysters on the half shell, grilled white and green asparagus, pan roasted sea scallops, grilled filet mignon with toasted garlic-bleu cheese fingerling potato fries and creole mustard-bourbon demi-glace. Dessert is a decadent chocolate fondue. All may be ordered a la carte, or enjoyed as a complete, multi-course meal, priced at $95 per person.

In addition to Sinatra's usual menu, Chef Theo Schoenegger presents the four-course Sinatra Seduction menu, featuring seared Sonoma foie gras with black peppered pears and candied kumquats, hand cut angel hair pasta in chive sauce with Osetra caviar, Mediterranean branzino with lobster and baby vegetable ragout or petit filet mignon with rosemary-garlic potato gratin and black truffle reduction. For dessert, enjoy a dark chocolate molten cake with raspberry flambe and amaretto crunch gelato. The prix fixe menu is $150 per person.

Society Cafe at Encore offers a special menu from Chef Bryan Forgione featuring items like butternut squash soup with spiced chestnut cream, baked Taylor Bay scallops in the half shell, slow braised beef short rib with whipped black truffle potatoes and lobster and organic pioppini mushroom cavatelli. Desserts include a toasted macadamia and chocolate lava cake, dark chocolate and mint petit fours accompanied by a glass of Brachetto d' Acqui. The four-course prix fixe menu is $65 person.

Wynn's head Mixologist, Patricia Richards, introduces a new cocktail, Cupid's Kiss, to the menu at Parasol Up and Parasol Down. Celebrate Valentine's Day with the cocktail that combines Zing Red Velvet Vodka, Godiva chocolate liquor, rock candy syrup and a red, marshmallow heart garnish. It is $14 and available at both Parasol Up and Parasol Down.

Scarpetta at the Cosmopolitan offers a prix fixe Valentine's Day menu for $110 per person featuring items like tuna crudo, diver scallops, ricotta and truffle ravoilini, Waygu strip steak and flourless chocolate cake for dessert.

Wicked Spoon at the Cosmopolitan offers several Valentine's Day menu additions like lobster fra diavolo, Hawaiian hearts of palm salad with passionfruit vinaigrette, miso-glazed California sturgeon, sauteed abalone and sunchokes with a vanilla beurre blanc and Champagne steamed mussels. For dessert, enjoy treats like raspberry marshmallows amd lemon strawberry cloud tarts.

Simon Restaurant & Lounge at Palms Place offers a tasting menu for two for $149. Enjoy menu items like French onion soup, a salad of hearts with bleeding heart radish, hearts of palm, artichoke hearts, celery heart, pomegranate vinaigrette and hot and cold shrimp. Main courses include grilled marinated hanger steak and seared diver scallops. Enjoy a "Sweetheart Sweets Platter" for dessert.
