JUAN LES PINS, FRANCE -- (Marketwired) -- 06/26/13 -- Dining out in the French Riviera is about more than just good food, and at Fushi Restaurant & Terrace, the newest venue at the AC Hotel Ambassadeur Antibes - Juan les Pins, diners get a setting that's as enticing as the menu.
The new fusion restaurant and lounge in Antibes features a talented team of chefs who have been working side-by-side for several years. With varied experience in Thai, Latin and French cuisines, the team created a menu that incorporates healthy, natural, fresh ingredients in dishes that cross borders.
Open for both lunch and dinner, this Antibes luxury hotel restaurant tempts palates with inventive takes on traditional dishes. For lunch, try smoked salmon with Kaffir lime cream and toast; a grilled tuna burger, a La Reine, Napolitan or Margherita pizza and banana fritters in dark chocolate sauce.
For those having dinner at this French Riviera hotel, the menu offers starters such as sweet and sour salmon tartar and Asian salad with grilled tuna, followed by entrees of stir-fried noodles with prawns and cloud ear mushrooms, and Asian-style beef tartar, featuring fresh beef from France. Close the meal with an ice cream sandwich with yuzu and coconut cream or the matcha-tea panna cotta with an aniseed biscuit.
The dishes here don't create themselves, and are the work of chefs de cuisine Eric Ciais and Raphaël Maumy. Ciais joined the restaurant at the start of 2012, bringing his education from the Alain Ducasse Formation in Paris and expertise in Thai, Japanese and South American food. Here he creates items with lamb, chicken, salmon and other seafood, and likes to put healthy twists on classic French dishes. Maumy has been at the restaurant since mid-2011, and got his training at Château Chinon School in Nièvre, where he specialized in catering and pastry.
